mung bean wraps

My best friends Jitendra and Komal introduced me to mung bean tortilla (known as Moong Dal Dosa in India) that are amazing, no fat, no additives, no salt, oil - just mung beans......

Buy in bulk organic mung beans, they are a beautiful green color and mung beans are at the top of the most nutritional food on the planet. Take a cup of mung beans, rinse them well and place them in a bowl submerged in water. Allow the beans to soak overnight. One cup of dried mung beans will give you 6 to 8 dinner plate size wraps.

The next morning or anytime during the day or night, whenever you are going to prepare these, drain all the water thoroughly and put the beans in a food processor. Now, grind the beans to a very smooth paste, you should not need any additional water as the soaked beans have plenty of moisture already. They ground to a light, smooth paste very quickly. The consistency should be thicker than pancake batter. Add a little Himalayan pink s...alt to taste if you wish.

Heat a heavy metal pan (non-stick preferably) until it is really hot. Scoop a ladle of the batter into the pan. Using a spoon spread the batter out to get it as thinly spread as possible all over the pan. Leave it to cook for 3-4 minutes on this first side. Then flip over and cook for a further couple of minutes on the other side. If you are planning on using them as wraps then don’t allow them to get too crispy (but never fear if you do as they will still soften fairly quickly anyway).

You can store the Moong Dal Dosa for a few days in the fridge with no problem. They roll beautifully and taste great…and I love the fact that I am getting the nutrition of lentils with no added oil.

Now comes the fun part, fill the Moong Dal Dosa with avocados, spinach, tomatoes, cucumbers, cilantro, onions, beets and even add some mango for a unique flavor........

Present the Moong Dal Dosa by allowing your friends and family to fill each one themselves with the vegetables and fruit you have displayed.......an excellent and nutritional mean that is fun to make.....
