Potato Curry
6 russet potatoes
3 tbsps oil
1 tsp salt
12 tsp cumin seed
12 tsp black mustard seeds
1 tsp turmeric (powder)

1 tsp ground coriander
14-12 tsp cayenne (ground black peppercorn)
112 cups water
23 cup frozen peas

| 1 | Peel and dice potatoes. |
| 2 | Heat oil and add spices. |
| 3 | Simmer for 2-3 minutes. |
| 4 | Add potatoes. |
| 5 | Immediately stir around until evenly coated. |
| 6 | Continue for 5-10 minutes until some cubes are a little crisped. |
| 7 | Add the water and lower the heat. |
| 8 | Simmer for 1/2 hour, stirring occasionally. |
| 9 | Add peas and simmer for an additional 5 minutes. |
| 10 | Serve hot. |
