This is the Harvest Soup because the colors and flavors subtly remind me of a fall harvest. It’s an easy and delicious Raw food recipe. With "RAW" being this easy and delicious, who needs cooked food?
Having plenty of Vegan food on hand is one of the keys to success with living the Vegan food lifestyle; so, I always make plenty extra when I prepare Raw Vegan recipes. This way I always have something “ready to eat” for the next couple of days. I can it drink straight out of the jar, easily take it with me when I’m running errands, or snack on it late at night when I’m watching a movie.

Yield 6 cups - Important - all vegetables have to be fresh and organic
1 cup water
1 large zucchini, chopped
2 medium tomatoes, quartered
3 stalks celery, chopped
2 cups carrot, chopped
2 cups of kale, stems discarded
1 cups of spinach or arugula
1 cup of parsley
2 dates, pitted
1 clove garlic
2 tsp Himalayan crystal salt
1 tablespoon onion powder
1/2 teaspoon black pepper
1 teaspoon of turmeric
2 lemons (juice)
1 whole avocado
Blend all of the ingredients on high speed in your blender until really creamy (approximately two minute – I prefer this soup a tad warm and very creamy). Continue blending, at a higher speed, for another minute or less if you enjoy the soup slightly warm. Enjoy!
