Lentil, orange and olive salad

LENTIL, ORANGE, AND OLIVE SALAD
1 tbs fresh lemon juice
1 tbs olive oil
2 garlic cloves, crushed
1/2 tsp ground cumin
1/4 tsp salt
Pinch of cloves
One 15 oz can of lentils, rinsed and drained
One 11 oz can Mandarin orange sections, drained
1 small red onion, diced
1/4 cup pimento stuffed green olives
2 tbs chopped parsley
Lettuce or spinach leaves (optional)
In a medium bowl, mix the lemon juice, oil, garlic, cumin, salt and cloves. Gently stir in the lentils, orange sections,onion, olives, and parsley. Serve over lettuce if desired.
