1 and ¾ cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 cup applesauce
¼ cup syrup
1 teaspoon vanilla extract
1 cup grated carrot
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon salt
½ cup sugar
Mix all ingredients in a large bowl until smooth. Spoon batter into greased muffin pan and bake for 20 minutes or until done in a preheated oven at 400 degrees. The muffins make a healthy breakfast for students to eat on the way to school or as a great mid-morning snack.
