breatfast muffins

  • 1 and ¾ cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup applesauce
  • ¼ cup syrup
  • 1 teaspoon vanilla extract
  • 1 cup grated carrot
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ cup sugar
  • Mix all ingredients in a large bowl until smooth. Spoon batter into greased muffin pan and bake for 20 minutes or until done in a preheated oven at 400 degrees. The muffins make a healthy breakfast for students to eat on the way to school or as a great mid-morning snack.
